
These caramel mascarpone bites might be a mouthful to say but they are actually delicious little mouthfuls that make an awesome snack for both kids and adults. My children absolutley love these, and yet they are sophisticated enough to serve at an adult gathering. You can make the caramel sauce way ahead of time and warm it up whenever you want to whip these up. The sweet graham cracker paired with the creamy and slightly salty mascarpone cheese, drizzled with sugary caramel sauce is an unexpected yet amazing combination. You can make your own mascarpone cheese if you’re feeling adventurous. Like making your own Ricotta cheese, it’s really simple, but I like using this nice little tub of it that I buy at Whole Foods.
Here’s what you need…
Cinnamon Graham Crackers
Mascarpone cheese
Caramel Sauce (I use Ree Drummond’s recipe for easy caramel sauce)
- 1 cup brown sugar
- 4 Tablespoons salted butter
- 1/2 cup of heavy cream
- 1 Tablespoon vanilla
- pinch of salt
Combine all of the ingredients in a small saucepan. While whisking often, bring this to a boil over medium-low to medium heat, and let it bubble gently for several minutes, or until thickened slightly (5-7 minutes in total). Serve this right away or store it in a jar in your fridge until you’re ready to use it. Simply reheat it in a pan when you want to use it.
Next, spread a dollop of the mascarpone cheese on top of the graham crackers, drizzle with the caramel, and you’re done! This is such a quick appetizer, snack, or dessert, that, like most of my dishes, looks kind of fancy, but really isn’t at all.
