This beef stir fry is healthy, delicious, and easy enough for a weeknight! This recipe comes from another of my faves, Skinnytaste. You can find her lightened up recipe for Peruvian “Lomo Saltado” here. I make my version with baked sweet potato fries and the result is a veggie and protein packed hearty meal. Don’t be scared if you think you don’t/wont like Peruvian/Latin food. This dish has universally delicious flavors that my whole family loves. I honestly forgot how much I love this meal and might even make it again tonight!
For the Stir-fry…
1- 1.5 lbs sirloin steak (My grocery store often has it already sliced “for stir fry” but if not, you can cut the steak against the grain into ½ inch strips)
sea salt to taste
pepper to taste
¼ tsp cumin
2 tsp olive oil
1 red onion sliced
1-2 yellow bell peppers sliced
2 cloves of garlic, crushed
1 container of grape tomatoes sliced lengthwise
1 ½ Tbsp soy sauce (low sodium)
1 Tbsp apple cider vinegar
chopped cilantro (we are not big cilantro fans in our house so I leave it out)
seeded and chopped jalepeno for extra heat
For the Fries…
1 or 2 sweet potatoes depending on how many fries you want
drizzle of olive oil
salt and pepper to taste
Pre heat your oven to 400. Wash and dry the sweet potato. Prep your fries by cutting the potatoes into fry size slices (thickness is up to you!) and toss them with olive oil, salt and pepper to season. Bake fries on a cookie sheet for 25-35 minutes depending on how done you’d like them to be. We like ours very well done and kind of crunchy so I tend to cook them a little longer.
While the fries are baking, season the steak strips with the salt, pepper, and cumin. Heat a large skillet or sauté pan and add the olive oil once it’s hot. Add the seasoned steak and cook for 2 minutes until browned. Add the onions, peppers, and garlic (and jalapeńo if you’re using it) and cook for 2 more minutes. Finally, add the soy sauce, vinegar, and tomatoes and cook for another minute. Serve it up with the fries or over a rice of your choosing. Top with cilantro if desired and add some avocado slices on the side. This is so yummy and it’s something a little different for a weeknight meal.
