One of my favorite things to make when there’s not a lot going on in the fridge, is a simple naan bread pizza. I buy the bread from Whole Foods (I like their 365 brand Tandoori Whole Wheat Naan) and then I doctor it up with various toppings. Super easy and the naan makes a great crust.
We happen to be obsessed with a certain pizza that we get at Nick’s New Haven Style Pizzeria in Boca Raton. If you’re around there, you GOTTA go. Our fave is topped with cheese, clams, garlic, and bacon. For me and my little family, this is pretty much all we need in life. And for two ex New Yorkers, this pizza place is pretty freakin’ close to what we’ve grown to expect from “apizza” Their crust is utterly amazing, and I am in no way claiming that this Naan bread makes up for that, but it does the job for the homemade version just fine. So I like to try to recreate this clam pizza at home, but I left the bacon off this time. You can obviously top these with anything you like and they will be great!
Naan Bread (white or whole wheat)
Extra Virgin Olive Oil
Salt and Pepper to taste
Toppings of your choice
(For the clam pizza I add canned chopped clams and fresh crushed garlic)
(For the cheese pizza I go with marinara sauce and the two cheeses above. duh!)
Heat the oven to 400.
First, I place the bread rounds on a cookie sheet and I drizzle a little olive oil on top. I like to cook these for up to 10 minutes just so they get a little crunchy and browned. Watch them carefully and take them out when they are crispy enough for you.
Once they’ve crisped up, the fun begins! The clam pizza I make doesn’t have a sauce, so I start by adding another drizzle of olive oil (I’m not exactly known for skimping on the olive oil) and sprinkle on the crushed garlic. I sort of rub the garlic around a bit so it covers the most surface area and then I sprinkle a generous helping of parmesan cheese on top.
Next, I add the shredded mozzarella and another small drizzle of olive oil for fun (maybe a final tiny sprinkle of parmesan) and then the chopped clams.
I bake these for about 6 minutes (I didn’t want the clams to get too tough and dried out) and then I turn the oven to broil for 1-2 minutes (watching carefully so they don’t burn!) so that you get those nice, bubbly, brown spots.
For the cheese pizza, I crisp up dough in the same way and then I add a little oil, tomato sauce, parmesan cheese, mozzarella, and another little sprinkle of parm cheese and olive oil on top of all that. I’ve been known to add some of that crushed garlic onto this one too.
These are even easy enough for the kids to help make, and everyone can personalize theirs how they like it. This is such a fun, easy, and quick dinner. We all need some those sometimes!
