So I took some (ok, A LOT of) time off for a little vaycay, but to make up for my absence I’m coming back at you with something delicious…an incredibly easy no churn Ice Cream. This version is a sweet cream, honey, sea salt ice cream that you will love. Now I’ve had countless ice cream makers, and I even have an attachment for the kitchen aid, but I can never seem to consistently freeze that bowl thing and therefore can never spontaneously make ice cream on a whim. This is the answer! You can whip this up in under 10 minutes and then stick it in the freezer. 6 hours later, your ice cream is ready to be served! This version has 4 ingredients; heavy cream, condensed milk, honey, and sea salt. Who knew that’s all you needed?
1 pint (2 cups) heavy whipping cream
1 can of sweetened condensed milk
¼ tsp honey (extra for drizzling)
½ tsp to 1 tsp sea salt (I like mine on the saltier side since this is so sweet already but salt to taste)
First, whip the cream in a stand mixer with the whisk attachment. Starting slow, gradually increase the speed to high until the cream is whipped and stiff peaks form. This should take anywhere from 2-3 minutes, but remember to always watch carefully when whipping cream, as it can turn to butter pretty quickly if you pass that stiff peak stage.
Next, fold in the condensed milk, the ¼ tsp of honey, and the sea salt, and combine gently. (I know this seems like a tiny amount of honey, but it goes a long way. The condensed milk is so sweet that more honey than that can make it sickeningly sweet. I learned this the hard way.) So mix that all together very gently until just combined. Don’t over mix!
I spread it into a metal loaf pan and then drizzled the top with a little more honey.

Wrap the pan in plastic wrap (making it as air tight as possible) and freeze for at least 6 hours.That’s it! Make it this morning and serve it for dessert tonight!

This cream and condensed milk combo makes a great base for exploring different add-ins and flavors (caramel?!) so go nuts! Scoop it out and sprinkle a little more sea salt on top to serve. You can’t go wrong with this one!
