It’s almost Memorial Day and for most of the country that marks the official start of summer. Here in Miami, we have eternal summer, so it pretty much just marks the beginning of sweltering heat and afternoon storms, but I’ll take it because it also means that school is almost over. As a teacher, I get even more excited than my kids do about that so while I’m in a festive mood, I’m making Ice Cream Cookie Sandwiches. These are inspired by one of my all time favorite treats, the “Chipwich”.
No lie, it’s safe to say that I ate one of these a day for a good year in high school. Seriously, they replaced my lunch, more often than not. If only my metabolism was as forgiving now! If you haven’t had the original, you haven’t lived. Anyway, these are a delicious, easy, and unexpected treat that you can bring to a barbecue this weekend (or any weekend all summer!) I use my perfect cookie recipe, but you can use your favorite cookie recipe, or even a (gasp) store-bought one. Then, just fill it with any ice cream flavor you like, roll them in some sprinkles, chocolate chips, or your other fave toppings, and you’re good to go! The only tricky part is getting them from here to there, but I wrap them individually in foil and throw them in a plastic zip bag in a small cooler with ice and they stay just fine until you can pop them in the freezer at your friend’s house.
These are a great addition to any summer lunch or dinner and no one will be able to resist these treats!
