This falafel salad is an awesome meat-less meal that is satisfying, filling, and really delicious.
Ingredients for a single serve salad
3 Falafel balls
Arugula and Spinach or greens of your choice
1/2 avocado sliced
Cherry tomatoes (sliced)
Sea salt and pepper to taste
Lemon
Extra Virgin Olive Oil
Tahini Sauce
My local Whole Foods has these amazing falafel balls in the packaged food section. I’m not sure if every store has them (these say they are local, but I would imagine there’s probably a similar item in most stores)
If you can’t find pre-made ones, there are some great falafel mixes out there. I really like “Fantastic Falafel” also available at Whole Foods, and it’s definitely worth making some and then keeping them in the fridge for a few days for just such a meal.
This is a super simple salad. Again, I was fortunate to get some arugula and tomatoes from my daughters school garden, and I had an avocado that was about to go bad, so I figured I’d put them to use!
I reheat the falafel balls at 375 (in my toaster oven actually) for about 15 minutes to warm them up. Meanwhile, I assemble my greens and veggies. I mix the arugula with some baby spinach, sliced tomatoes, and avocado. I sprinkle some sea salt and pepper and squeeze some lemon over it all. Of course, I like to drizzle a little extra virgin olive oil on there too.
When my falafels are warm and toasty, I cut them into quarters and throw them on the greens. The package I buy comes with a small container of tahini that I drizzle over the whole salad. You can, of course, also buy a tahini dressing and do the same.
This salad is so so good and so good for you! It makes an awesome vegetarian dinner that doesn’t leave you feeling hungry and fills you up with wholesome goodness. I promise you’ll be surprised at just how delicious this really is!
